    Font - I signed the new contract at the $35k salary because I don't want to be unemployed but this isn't enough to live on. I have student loans. I live in a not cheap city and am now paying 80%+ of my paycheck on rent and utilities.

Of course, if you're an American I'll assume government agencies will be of little help, but there might be some states/etc that still have some labour protections. Signing the new contract has no bearing on your case against them, it was done unilaterally to you and therefore in a state of duress as the alternative was being jobles
