The problem here is not that the employee isn't communicating enough; it's that his boss and coworker are overstepping boundaries. Clearly, this employee had said plenty about his whereabouts over the past few days. He had to take off due to a family emergency. No further explanation is necessary. He even followed up over the weekend via email and again over text with an update that he wouldn't be in the office for one more day but that he would be back on Tuesday. Again, this is a perfectly sufficient amount of communication, and no further explanation is necessary.
But of course, given that we live in an age when employers think hiring an employee gives them the power to oversee their lives, this boss thought otherwise. He and the employee's coworker began bombarding the Redditor's wife on her phone with numerous questions trying to confirm that OP was telling the truth. Not only do they have no right to learn any more about OP's situation, but also they have no right to use his emergency contact unless it's, you know, an actual emergency. Given the number of updates OP gave, this certainly does not qualify as an emergency worth spamming his wife's phone.
