Chef Jason Quinn of The Playground in Orange County has concocted a meaty "Foie U" in response to California's recent ban on foie gras. The Shut the Duck Up burger is a doubled-up version of the restaurant's popular Playground burger -- Wagyu chuck & dry-age ribeye torchon patty, Tomme de Savoie and maple-bourbon onions -- but topped with the fatty liver delicacy.
Chef Quinn is taking advantage of some loopholes in the new law -- he's not actually selling it -- which make foie gras still accessible, and plans to have an eating challenge to celebrate his decadent burger.
