Don't ever let him catch you calling it "hot leaf juice" or else you'll be banned from the tea shop and an enemy of the dragon of the west. They didn't have soda, coffee, or anything else in the ATLA universe, so tea was the ultimate flavored drink. No wonder he loved it so much, he just wanted to drink something tasty!

This is an excellent version of the classic Smudge meme - too bad Jet was right the whole time and then got abducted by the Dai Li and brainwashed. Although he was one of the minor characters, the writers still gave him a good backstory and character development. It's one of the great parts of the show!
