This doesn't seem like a particularly unhealthy lunch? I mean, our protagonist doesn't disclose what kind of sandwiches she makes, but even so – even if it's a little carb-heavy, it sounds perfectly acceptable to me.

I'm genuinely struggling to understand what is so unhealthy about cheese, yogurt, a sandwich, and a bag of chips. Sure, the chips aren't the same as a vegetable, but part of eating healthy is having balance.

"I looked like the worst mom today": Mom stops including fruit in 7-year-old daughter's school lunches because they just end up in the trash, teacher berates her for packing only processed food
Back in the good old days, my dad would wake up in the early hours of the morning to pack my lunch. He's a Latin American man, so the concept of Lunchables was completely appalling to him. Instead, his lunches consisted of plantains, black beans, avocado, and tortillas – all of my favorite foods from his home country. While I found it delicious, being cultured or healthy wasn't exactly "cool" yet the way that it is now, so kids would balk whenever I'd unzip my lunchbox. No one wanted to trade their Oreos for my chamoy-covered mango pops.
In our story today, the lunchtime drama makes it way to the parent-teacher meeting. Our protagonist, whose picky eater daughter refuses to eat any fruit, has recently decided to stop wasting money on it at all. It's only been a few days, but her teacher catches on quickly and chastises mom for removing the only "healthy" part of her daughter's meal.
