"You know how cats usually meow? Yeah, the cat will stop doing that… It will mostly start doing gestures and 'Cat Sign Language' to get your attention."
Why do dogs always get the label of human kinds best friend? Cats can be just as loyal. For example, this woman who grew up in a deaf household that used ASL watched as her cats decided meowing was useless, so stopped doing that, and picked up their own “cat sign language.”
She's not saying the cats learned ASL, they don't have hands so that would be hard… But, with their own toe beans and floof, they figured out their own form of communication that did not include sound. She says that her cats learned to do certain taps or numbers of taps for different things, and have her deaf parents follow them to things like their food bowl or the liter box.
Sure, cats are not on the official list of approve service animals, but at this point, it's starting to feel like it's completely by choice. Because it sure as hell ain't because they aren't smart. They can learn and adapt as much as the want, but we suppose that's the operative word there—“want.” They'll learn sign language on their own terms, not because they're your science experiment.
Anyways, long story short, cats are the best and they will literally make up their own sign language to communicate with their beloved humans.
