In this case, OP began working in a short-staffed office. The person training OP ended up quitting, which only caused further problems for OP, who was already picking up a lot of slack. Their boss used that as an additional excuse to make OP work through lunches (timeclock deducted) and stay after scheduled shift time. So, OP was essentially working overtime, without getting paid, and was also not allowed to go eat lunch, resulting in long, exhausting shifts.
OP realized that they didn't actually owe this boss anything, so they began quiet quitting and looking for a new job.
