Imagine being the kind of person to selflessly double and triple check things on your coworker's behalf, only for them to throw you under the bus the first chance they get. Perhaps Eric felt like he was being chaperoned or babysat on the job, but clearly, the babysitting was working. It turns out that after all that, Eric really could not complete all of his daily tasks and responsibilities before the night shift was over.
The author had to keep reminding him of the breakfast preparation. If he really had faith that he could do everything on his own, then Eric would probably need to follow up on that promise by, you know, actually proving that he can do his own job.
