This simply isn't her responsibility. If they knew they wouldn't have time for this high-energy dog, they could have at least discussed this with her before adopting instead of just assuming she'd be down to take on this responsibility.

My fiance wants a big dog more than anything, but we live in a tiny apartment in the city and are barely ever at home. I know that if I cave and adopt with him at this point, my future MIL will end up just like this one. A big dog is a huge responsibility. Any pet is, of course, but the time and energy required to make sure the pup has the life you want to give it shouldn’t be underestimated.

There is a huge difference between graciously asking someone for help and simply assuming that someone will be happy to take on your responsibilities. There is at least one person in every family like this. They expect favors, try to convince you that they're "not a big deal," and then act offended when you tell them no. Pets seem to be at the center of this sort of family drama quite often. That's because lots of people seem to get big, high-energy dogs without really realizing the kind of daily responsibility that they entail.
That's what's happening here when a young soon-to-be-married couple finally adopt the big dog of their dreams. Except they didn't really consider all of the work, money, and attention required to give the pup the life he deserves. They think they've found the perfect solution, though. The man's mom only works part time and lives alone, surely, she has plenty of time and energy to take care of their new pooch every single day. She politely declines, explaining that she has her own life, but her future daughter-in-law takes offense and claims that she feels unwelcome in the family.
